CHEDDAR & CHIVE BISCUITS


These biscuits are always a hit in my home!

This is a small batch recipe. Makes about 4 biscuits. Double the ingredients for more biscuits.

This recipe works best with a biscuit cutter, but it isn't necessary. You can also shape each biscuit with your hands.

INGREDIENTS

ROASTED GARLIC BUTTER

  • 1/2 stick butter, softened
  • 1 whole head of garlic
  • Olive oil, for drizzling
  • Salt, to taste

BISCUIT DOUGH

  • 1/2 stick butter, melted and cooled to room temp
  • 1/2 cup freshly grated cheddar cheese (off the block)
  • 3/4 cup all-purpose flour
  • 1 tsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 2 tsp chopped fresh chives (or more if your garden is thriving!)
  • 1/4 cup buttermilk, very cold

INSTRUCTIONS

PREP GARLIC BUTTER

  1. Preheat oven to 400°F.
  2. Slice the top off the garlic head so the cloves are exposed.
  3. Place in foil then drizzle generously with olive oil and sprinkle with salt.
  4. Wrap tightly in foil.
  5. Roast garlic for 30-45 minutes until soft, golden and caramelized.
  6. Let it cool slightly before handling.
  7. Squeeze softened garlic into a bowl.
  8. Mix with softened butter until smooth and spreadable.
  9. Set aside for brush on the biscuits later.

BISCUITS

  1. Preheat oven to 425°F
  2. Put the 1/4 cup of buttermilk in the freezer while you prep the following steps. You want it to be super cold, but not frozen.
  3. In a bowl mix: flour, sugar, baking powder, baking soda and salt.
  4. Add shredded cheddar, chopped chives and mix.
  5. In a separate cup, mix the melted and cooled butter with the very cold buttermilk. It will chunky and weird. Don't worry, that's what you want to see!
  6. Pour the butter/buttermilk mixture into the dry ingredients.
  7. Mix until combined. It may look a little crumble and dry at first. That is normal. If you sense it is TOO dry, you can add small drops of buttermilk into the mixture.
  8. Use your hands to bring the dough together. Knead gently into a ball.
  9. Flour a surface and pat the dough into a square, about 1/4 inch thick.
  10. Cut with a biscuit cutter or shape by hand.
  11. Bake for 10-12 minutes at 425°F until golden.
  12. Brush warm biscuits with your roasted garlic butter.
  13. Enjoy!
